Risotto

A paean to analogue.

Adam Roberts and Matteo Fargion make a risotto, specifically: Risotto al radicchio e finnochi.

A sofritto of shalot is cooked in butter. Thinly sliced fennel is added with a pinch of salt, and cooked until softened. Add some water if needed to keep it moist. Chopped radicchio is added and warmed through to drive off the moisture. Carnaroli rice is added, and cooked until transluscent, or toasted. Wine is added and cooked off. Now broth is added, a ladle at a time. The risotto is cooked when the rice is al dente. Parmegiano-Reggiano and more butter is added to the risotto. Season, and leave to rest. Serve with more cheese if desired.
